Healthy lemon cream, egg-free, refined sugar-free

Ingredients:

  • 400 ml coconut milk (canned)
  • 3-4 tablespoons of maple syrup or agave syrup (depending on desired sweetness)
  • Juice and grated zest of 2 organic lemons
  • 2 tablespoons cornstarch or arrowroot starch
  • 1 TL Vanilla extract
  • A pinch of salt
