Healthy lemon cream, egg-free, refined sugar-free

Preparation:

  1. Prepare the coconut milk  : Place the coconut milk in a medium saucepan.
  2. Add lemon juice and zest  : Squeeze the juice from the lemons and add it to the coconut milk along with the grated lemon zest.
  3. Add the sweetener  : Add the maple syrup or agave syrup and vanilla extract to the saucepan. Mix well.
  4. Mix the starch:  Mix the cornstarch or arrowroot starch in a small bowl with a little cold water until smooth, so that no lumps form.
  5. Thicken the lemon cream  : Add the cornstarch mixture to the coconut milk mixture in the saucepan. Stirring constantly, heat the mixture over medium heat until it begins to thicken. This may take a few minutes.
  6. Cook and stir:  Once the mixture has thickened, reduce the heat to low and simmer for another 2-3 minutes, stirring constantly, until the custard reaches a pudding-like consistency.
  7. Let cool  : Remove the finished lemon curd from the heat and let it cool slightly. Then pour into bowls or glasses and let it cool completely in the refrigerator.
