Oatmeal and walnut cookies with chocolate filling
Preparing the dough: In a large bowl, mix the oats, flour, baking powder, cinnamon and salt.
In another bowl, beat the butter with the brown sugar until fluffy.
Add the egg and vanilla extract and mix until smooth.
Add the dry ingredients to the butter mixture, then add the chopped walnuts and dark chocolate.
Knead the dough and refrigerate for at least 30 minutes.
Shape the cookies: Preheat the oven to 180°C.
Line a baking sheet with parchment paper.
Form the dough into walnut-sized balls and place them on the baking sheet.
Flatten the balls and bake for 12-15 minutes or until golden brown.
