Pineapple Bars Recipe
Ingredients to Gather
For the Crust & Topping:

For the Filling Mix:
2 large eggs, beaten
1 cup of sugar
½ cup of sour cream
A pinch of salt
½ cup of all-purpose flour
½ of a whole fresh pineapple, finely sliced, or a 16-ounce can of crushed pineapple, drained
For the Coconut Icing:
1 cup of confectioners sugar
2 tablespoons of half-and-half, adjust as needed
1 teaspoon of coconut extract
